3/4 cup Pumpkin puree
1 large egg
1 cup unsalted butter
1/2 cup brown sugar
1 cup granulated sugar
3 3/4 cups flour2 teaspoons vanilla
1 1/2 baking powder
1/2 teaspoon salt
1/2 ground cinnamon
1/4 ground nutmeg
Coating:
1/2 cup granulated sugar
1 teaspoon cinnamon
In mixer bowl beat butter and sugars 2-3 minutes until fluffy. Stir in pumpkin puree, then the egg and vanilla. In separate bowl whisk together flour, baking powder, salt, cinnamon and nutmeg. Slowly add the dry ingredients with the wet ingredients with the mixer on low. Once all the dry ingredients are added cover and chill the dough for at least an hour.
Preheat oven to 350. Mix coating ingredients in small bowl. Scoop dough and roll into 1-2 inch balls. Roll balls in sugar mixture. Place on cookie sheet about 2 inches apart. Slightly flatten cookies with fingers and sprinkle with coating. Bake for 12-14 minutes until bottom is slightly golden. Transfer to wire rack to cool. Makes about 48 cookies.
