Veggie Tortellini Soup

1 med onion, chopped
3 med carrots, chopped
1 green bell pepper, chopped
1 garlic clove, minced
1 can petite diced tomatoes
1 can corn, drained
2 med zucchini
2 quarts water
2 tubs of homestyle stock (knorr)
red pepper flakes
1 package frozen tortellini's

1. In soup pot add a little olive oil, sweat together carrots, onion, bell pepper and garlic until onion is translucent.
2. Add corn and tomatoes along with 2 quarts of water, bring to a simmer.
3. Add sliced zucchini, stock, red pepper flakes and tortellini's. Simmer until zucchini and tortellini are cooked about 15 minutes
